Raspberry Ice Cream

This is not classic ice cream made with custard. Actually it is better, it has a higher fruit content and just uses single cream. It is rich, not quite as smooth, but the taste is fab. And it doesn’t get much simpler than this. If your raspberries are great you need less sugar, if there are not sweet add a little more to taste. Ice cream mixtures taste a little sweeter warm than when frozen.

Two pack of fresh raspberries

1 small pot single cream

2 tsp caster sugar

Puree the raspberries with a hand wand blender. Mix the ingredients together and put in the ice cream maker. Once frozen you are done.
