The question was what to cook on valentine’s night and having thought about it, either Dover Sole or Chateaubriand, I went for Dover Sole. This is the unrivalled best of fish for me and I think it goes brilliantly with freshly cooked spinach, crispy potatoes and béarnaise sauce. Start with the potatoes first, make the béarnaise and then cook the fish. In all it shouldn’t take more than 35 minutes.
